Shameful cauliflower recipe...including bacon and lots of cheese! Not low-cal or particularly healthy, but in the spirit of wanting "more", then this dish fills the bill (and the belly!):
Creamy Cauliflower Casserole With Bacon and Cheddar
6-8 servings 45 min 20 min prep
8 slices bacon, chopped and fried crispy
3 cups shredded cheddar cheese
1 tablespoon fresh parsley
salt
2 large cauliflower heads
4 ounces cream cheese
1/4 cup sour cream
1/4 cup heavy cream
1/2 teaspoon pepper
Mix bacon, 1/2 cup cheese, and parsley in small bowl. Set aside for topping. Heat oven to 350 degrees. Bring 4 quarts water to boil in large pot. Add 1 tbsp salt and cauliflower, cook until tender. Drain and rinse with cold water. Transfer half to cutting board and roughly chop. Melt cream cheese on low heat. Stir in heavy cream and remaining 2 1/2 cups of cheddar, cook until starts to melt. Off heat stir in sour cream, cauliflower, 1/2 tsp salt and pepper. Transfer to a 2 quart baking dish, sprinkle with topping, and bake until brown and bubbly, about 15 minutes.

Mmmm, this looks good. I love raw cauliflower, but I never seem to know what to do with it as far as cooking goes. It's so bland. Sounds like this might be the ticket, plus, anything covered in cheese and bacon gets a vote from hubs. Thanks! Btw, I was showing this recipe to hubs, and several other posts and he said, "Hmmm, she gardens, cooks and likes spiders... every dude's dream.."
I pointed out that you also grow worms... His response was -- "Ooooh, baby...." heh

Yay! Well, at least it has a vegetable. I wonder if it would be good w/ broccoli instead of cauliflower. For whatever reason, I just can't go there. I'll bet you could add peas to this too. Loves the peas.

Vonne-Oh yea...he just exhudes such warmth and a genuine vibe...and I just LOVE to hear that polite, Kentucky boy sayin' "Ma'am"...heh...drives me wild! And those beautiful, soulful eyes, and that gorgeous jaw, and sexxy way he moves...yea. He could be all scruffy, bearded and dirty, and I could spot him anywhere! I was actually lucky enough to be close to a beautiful and exquisite creature recently...every bit as gorgeous...like touching the hand of an angel. Heh...got lost there.
